If you’ve ever seen whey protein powder at health

food stores and gyms, this is how it is made. The

recipe doesn’t make a lot, but a little goes a long way.

It’s delicious in a banana smoothie!

YIELD

Makes 70— 100 g ( 2 ½ — 3 ½ oz)

INGREDIENTS

2 litres ( 68 fl oz/ 8 cups) whey

METHOD

Pour the whey into a glass baking dish or stainless- steel

tray with a good amount of surface area so you can

make a shallow pool. Place in a dehydrator or low oven

at 100° C ( 212° F) for 12 hours or until the whey has dried

into a sheet. Allow to cool and then, using a baker’s

card or fish/egg flip, scrape the sheet into a blender

and blend into a powder. Store in an airtight container

in a dark, cool place.
